I love summer but I'm getting tired of grilled everything. I won't put on the oven yet so I was trying to come up with something different. I made chicken piccata yesterday. Pretty damn good for my first attempt. I also grilled some eggplant slices and topped them with petite diced tomatoes sauteed with garlic, crushed red pepper and a bunch of basil, then sprinkled with pecorino romano cheese to finish it off. Oh, I almost forgot the sauteed broccoli rabe. Of course I forgot to take pictures. If I remember I will take a picture of the leftovers tonight. YUM!

Our anniversary is today, but we had a big dinner Saturday night, and it turned out to be at home because our dinner plans fell through.

How about smoked? That is a different taste than grilled. You could get yourself a pit barrel where you basically don't have to monitor it and have smoked everything. It's the newest thing I have so I'm infatuated with it right now - I'm sure that will pass in time.

Word to the wise on this - partially cook the bacon on this ahead of time. Scallops only take a minute or two per side. That doesn't give the bacon enough time so most will end up overcooking the scallop to finish the bacon.
Partially cook the bacon on low, half way maybe a little more - rendering some of the fat out will also minimum bacon "shrinkage" once its cooked with the scallop. By the time the scallop is done the bacon will be perfect |
