How long can you leave food out?

My girlfriend is out of town and is flying home today. She texted me and said she was going to a popular sub shop in South Florida (Laspadas) and asked what kind of sub I wanted. She said she doesn't have a cooler and the sub will be fine.

So the sub will not be refrigerated for like 6 hours if not a little longer...is that seriously safe to eat?

I wouldn't touch it if it has any mayo on it.

Why mayo specifically? Mayo is just oil + eggs. You can leave eggs out at room temp (they do this in Mexico)

Unwashed eggs have a "bloom" that protects against bacteria transfer. They can last for weeks if not exposed to high temps. Once washed all bets are off.

It has something to do with the way eggs are washed in the US and Canada. It removes something from the shell that necessitates refrigeration.

A very quick google search produced this statement: "Cleaning the eggs removes the cuticle, so the eggs must be kept at refrigeration temperature. Otherwise, the bacteria could easily enter the egg and multiply to dangerous levels. By keeping it out of the danger zone, salmonella can't multiply rapidly."

As long as it doesn't have any sauce/mayo in it ( you can add some later ) you will be safe to eat it.

As others have said if it doesn't have sauce on it (mayo, oil, vinegar, ketchup etc) I don't see why not. Even with sauce I'm not sure that it would be unsafe, but it would certainly be a soggy mess when it arrived. I'm not sure it would be as good as eating is fresh, but I doubt there is much risk to it.

Before she leaves the airport, have TSA run it through their scanners a bunch of times. That should kill everything.

I break these rules all the time and am still alive, but since you asked for some kind of real answer. I eat all sorts of food that many say isn't good after it's been out for a few hours. I even eat raw chopped meat when I'm preparing hamburgers. I would just be worried that it'll get soggy from the lettuce, tomato, oil, and any other liquid runoff that will soak the bread. Maybe she can gets those things on the side and you can put it on the sub yourself.
