I like them both. Square for thin crust... triangle for thicker crusts

We've been living here in the pizza desert for 20 years. There are several pizza joints in town, but none are anywhere near as good as the pizza you can get in New England, New York, or Chicago. Think Dominos. That sort of stuff. Some tasteless excuse for cheese and limited sauce.

There is an Italian restaurant in the next town over. We've been eating there for years. They have one entree I like so much that it's usually what I order. We got takeout there tonight and I finally decided to try one of their pizzas. I got a pepperoni and sausage with extra cheese (since most places here skimp on cheese). When I picked it up, I was surprised how heavy it was. When we got home and I tried a bite, I was stunned. Best pizza I've had in years and certainly the best pizza I've ever had out here in the fields. Loads of cheese that actually tastes like pizza cheese should. Good crust and plenty of sauce. I was in heaven. No more crappy pizza for us from now on. I'm just pissed that I've been eating crappy pizza all these years when a restaurant we frequent had such good stuff.

Two (2) weeks from today I fly into Newark and have already requested my bro in law to buy me a large roni pie just for me to eat when I arrive. Pizza in FL and IN suck major hairy nuts

Not much of an update from me other than I just finally converted to using exclusively 00 European flour from soft winter wheat, results in a thinner crust and a little less chewy from the lower gluten and I think I prefer it.

On a side note, I know folks in the US who are gluten intolerant who can eat flour products in the UK. Must be that lower gluten flour that allows for that. We were there for a conference and had dinner with Wifey's friend who lives in D.C. She can't eat any gluten products in the US. She was almost in tears of joy over there in London because she was able to eat things like meat pies and pastry.
