I tried my hand at vegan Matter Paneer (tofu cubes instead of cheese). Came out ok, but next time it needs a small can of coconut milk to add some creaminess, I think. Rice and mini naans here.

Wife went to get her nails done right after work. Then I got really hungry. Then she came home with bags and bags of food, so I grabbed a few Hot Cheetoh Sour cream/cheaddar ruffles. Would eat again.

The better half is planning on making panko crusted mahi-mahi and steamed broccoli (which I always add copious amounts of soy and sriracha too).

Coconut chicken and rice. Dutch oven meal. Came out ok. Learned a couple of lessons I'll put to use next time. Tomorrow night is takeout night. Looking forward to a nice pepperoni pizza.
