Hard Boiled Eggs

I make hard boiled eggs every sunday and eat one with my lunch almost every day. I put a little hot sauce on top its great.
My cooking method: boil for 8 minutes with a little salt or lemon juice in the water which helps stop the egg from spilling out if the eggs crack while cooking. |

This is my recipe so the eggs are not over cooked and gross.
My elevation is 3200ft (which effects the temp of boiling water). Start with cold water, put eggs in pot submerged. Bring to boil, 5 min boil uncovered, shut off burner 10 min rest covered Then rinse with cold water until cool. Peel. No gross greenish layer, and yolks will have solid but smooth texture. I also buy very high quality eggs. I eat 3 a day. |

Great responses! I have been buying cage free hard boiled eggs, cutting them in half and sprinkling Chile Lime seasoning on them. But I am going to start making my own. How long do they last in the fridge after peeling? I need to get on the hot sauce though. Considering 3 a day sounds about right.

I eat two almost everyday. I keep about 6-8 in a pickled jar in the fridge. When they are gone I boil some more.
When the water starts boiling I turn the stove off and let them sit until it cools down. Like that you never over boil them. |

At first I was confused but then I realized that for some of you, hard boiled eggs may not be something you've had before.
I've been eating them since I was a kid, regularly. They are the perfect snack. |

We eat them all the time, it's a great snack instead of an unhealthy option.
Put the eggs in a pot covered in cold water, bring to a rolling boil, remove from heat and let sit for 12 minutes. Rinse with cold water, enjoy. I usually cook up 8 or so at a time and keep them in the fridge. |

Wife and I eat them all the time with a bowl of rice for lunch. I use my Instant pot, perfect every time and peel super easy. I prefer to use a pot, but I can never get them to peel properly, but in the IP they peel perfect every single time.

Hmm now I'm wondering if making them in my air fryer will be easier for peeling.
My grandma always made a large tray of deviled eggs for family gatherings. They just never became a staple at my home though. I like the idea of them becoming a primary snack food though. |

Before you put an egg in the water to boil, you have to spin it a bit on the counter. Centers the yolk.
If you put it in the water, and it doesn't lay flat on the bottom, you have some H2S in the shell. That will lead to a bit a green edge on the yolk no matter what you do. If it stands upright in the water, don't bother cooking it. I put eggs in pan, bring up the heat and set a timer for 15 minutes. When it rings I rinse out the pan and hot water, backfill, then drop a few ice cubes in. Shrinks the egg a bit from the shell for a bit easier peeling. Sprinkle with Lawry's or Tajin. Once peeled, you can't really tell the difference between a chicken or turkey egg, if you happen to have both in your back yard!

made my own today with air fryer - one egg broke open the other 5 were a success… kind of smelled gross - compared to the store bought hard boiled eggs - but i assume there is a gas they give off after they are pealed ….

5 minutes boiling time plus 10 minutes in the hot water with the heat off. Salt in the water to avoid large boiling bubbles causing cracked shells, and white vinegar to aid with peeling.
Tap the egg on the counter to crack then roll on the counter with the palm of the hand to completely crack shell. Peel. Perfect every time. |

Love them! I tend to eat a lot of eggs, especially when dieting. Hard boiling them makes it easier. I typically consume a ratio of 8-to-2; whites to whole eggs……in any one sitting.

I just bring the water to a boil, then turnoff heat and cover the pot for about 10 min or so.
Also, take it up a notch and do some "scotch eggs" great lunch and snacks Last time I made them, the SO was wtf are you doing, no one will like them. Then the group ate all of them at all times of the day and night.
