Sure!

We cooked everything directly in the pan right on the blackstone griddle.

However, our take included a yellow sweet onion in addition to two leeks diced thinly and cooked down. For greens we used spinach only. We also went with a spicier green chile pepper (but use whatever is at your spice level). And finally, we used Labneh instead of the yogurt the recipe called for.

Super easy to make little pockets for the eggs when cooking on the blackstone as well!
