We had the fifth annual neighborhood rib cook off this weekend, this is the third time I have participated.

I prefer dry rub ribs, but after the last two years I have learned that sauce is necessary to win with these 'judges'

My first two years I got second place, this year I made a sauce and got third. I we with a southern style with a pretty good amount of vinegar, which I really like, and some others did too. Next year I'll have to back off the vinegar and play to the audience.

I must say, the quality of ribs that everyone turns out is impressive, with two exceptions (one was too smokey and one was a bit burned) you would be happy to get these in a restaurant.

Lol it was! Some of the olive oil dripping cause the big flame up! I thought for pure aesthetics would make an awesome picture

I've been wanting to experiment with Beef Ribs, so yesterday I did. Smoked for about 3 1/2 hours, wrapped with some homemade beef stock in the pan and back on the smoker for another hour and a half.

I also made a KC Style BBQ sauce to go with it.

They turned out great!

Reverse seared a ribeye Friday. 225 indirect on the egg until it reached 115f. Then I pulled it off and got the egg up to 600 plus and seared on each side for about 2 minutes. It was amazing.

looks good! I wanted to ask you rib grillers do you remove the membrane prior to cooking?

Looks great. Big fan of the reverse sear method.

It works really great with the bigger pieces of meat, like prime rib etc.

Finally got a grill basket to do veggies. Did chicken with zucchini, onions, and bell peppers with coconut rice and coconut currie sauce.

I'm a foreigner but am moving into my first home in Texas shortly, and I'd like to do some nice smoked brisket Texas style. I've looked at Traeger grills - seem pretty solid being able to feed themselves overnight, but is that a good way to go for an amateur/first timer?
