TOLO chicken tender, salad and freekeh

Freekeh is green-harvested grain, dried then fire-roasted. Prepared as a pilaf with onions, garlic and 9-spice. 9-spice includes allspice, cloves, nutmeg, cumin, coriander, cinnamon, cayenne, mace and black pepper.

Freekeh can be used in a similar way that bulgur and basmati rice are used.

French onion soup au gratin.

9-spice flavors nicely developed overnight. With hard boiled egg, tomato, Kalamata olives, Pepperoncini and extra EVOO just to be on the safe side!

It was a Maui onion jam on top. Not sure what was underneath, but it was really tasty!

Here is what I made, pictured above:

1 cup dry freekeh (Middle Eastern grocery or online)
2 cups water
1t salt
1 small onion, diced
1 clove garlic, minced
1T 9-spice - depends on your preference

Sautee onion and garlic in EVOO until soft. Add dry freekeh and coat well with oil and sautéed veggies. Add water, salt and 9-spice, bring to boil constantly stirring. Reduce heat to a low boil/high simmer. Cook uncovered for 30-45 minutes until freekeh is done. Stir frequently. Freekeh when properly cooked has tender and quite firm tooth. Soft and mushy is overcooked.

Spices truly need time cooking in liquid to bloom and deliver flavor. Best results are after an overnight rest in the cooked item. Undercooked spices are harsh and raw tasting.

9-spice: equal parts:
Cumin
Cloves
Coriander
Cinnamon
Allspice
Black pepper
Nutmeg
Mace
Cayenne

9-spice has as many variations as there are cooks. Mine is inspired from YouTube cooks and is spice-oriented. Other combinations can be made with Levantine herbs including thyme, marjoram, oregano and more.

YouTube and the internet have many freekeh recipes. Below is one I used to learn the basics. This recipe calls for meat and nuts, which would be great. I chose to make the pilaf base of grain, onions, garlic and spices.

Bucatini, Olive Oil, lots of Garlic, Diced tomato, Walnut, Parmigiano-Reggiano and Basil.

We used to have it all the time but tonight is the first time in over 5 years.
