Meat Balls with Mushroom & Green Onion Gravy on Egg Noodle

Middle Eastern fava beans

Excellent flavor, healthy and satisfying.

Makes 2 entree servings for light eaters.

1 can fava beans
1 medium onion, diced
1 green chile, chopped
2 cloves garlic, minced
3 medium tomatoes, diced
1 bunch flat leaf parsley, chopped
1 lemon, cut in half
tahini
salt
pepper
ground cumin
EVOO

Heat oil, cook onions and garlic until they start to soften. Add chile and cook. Add tomatoes and cook until they start to soften. Generously season with salt, pepper and cumin. Add 3/4 of the parsley, 1/2 of the lemon juice, fava beans and liquid. Bring to boil, stir then reduce to low simmer. Season again with salt, pepper and cumin. Simmer uncovered for 1 hour, stirring every 10-15 minutes.

Plate (or bowl), drizzle with tahini, squeeze remaining lemon half and top with remaining parsley. Dust with cumin. Serve with flat bread and optional sliced boiled egg. I used saj bread, a translucently thin flatbread. Grapes for dessert!

Last night’s traditional, non-traditional churrasco (beef tenderloin) with homemade chimichurri and cheese-topped mashed potatoes (since I’m still dealing with TMJ stiffness and pain), prosciutto wrapped asparagus and black beans and rice. Also some corn mainly for the non bean-eater (me).

Went to the local butcher.. Wanted some filets Mignon but he was all out... so had to settle for a few 18 Oz ribeyes... that and asparagus and local butternut squash.
