I might give it another try in a seafood chowder where the texture might match some of the Bivalvia's.
You have the extra firm, so that's a good start. Wrap in a paper towel or cotton kitchen cloth and squeeze out as much water as you can without going crazy on it. Chop into cubes and coat in corn starch by tossing the tofu cubes in a bowl with the CS. Then fry in some sort of oil until lightly browned. I just use vegetable oil. Then add whatever sauce you want.

An easy sauce to make is a 1/4 cup Tamari or soy with a Tbsp of brown sugar dissolved in it. Saute up some chopped scallions and shallots, then add in the browned tofu and dump the sauce on everything. Add in a good helping of black pepper (everyone's taste is different here, so go with what you think your tolerance level is). Let it thicken for a bit, then serve over rice with a side of baby bok choy or some other green veggie.

FWIW, I'm super picky when it comes to tofu texture. Wifey likes tofu dishes at the local Thai place, but I don't. Their tofu is too mushy. Different brands of tofu will have different textures as well, even if they both say Extra Firm.

What, no tofu???

Lady Jane you seem to be using tofu in less-than-traditional concoctions. The general idea of adding it to something it can simmer in is usually best, in addition to the previous frying suggestions.

Something new at the deli counter. I decided to give it a try since it looked appetizing.

The outer crust was rock hard and the center crust was paper thin. The topping was mildly palatable. That's what I ate and got rid of the rest. Usually, PC products are pretty good but not this time.
