But, like everything, priorities hit and wanted to try a more 'set it and forget it' mode. Starting a couple pork butts at 5:00pm, adding water at midnight, coals at 3:00, water again at 6:00AM - starts to draw on you. So...that being, wife just bought me this bitch.

New to me, obviously. Never even cooked with gas damnit, charcoal and wood only. But I know there's at least better pellets out there than your standard Traegar ones. Going with these first.

Picked up this bad boy to smoke and grill in the elements too.

No worries - not going cold turkey here. While I'll be keeping the WVB, my Weber Performer and 1991 Weber Kettle will remain on staff for day to day use.

What type of pellets did you buy? I can't quite read the brand from the pictures, but going to be buying pellets in the near future too.

I jumped on the Uuni Pro pizza oven crowd-sourcing, and the new pizza oven is due in a few weeks. Runs on propane, charcoal, wood or wood pellets. Most people with the smaller options use the pellets, so I think thats where I'll be starting too!

Alligator. It's delicious.

I have a story and I swear this is true, when I was a kid my dad worked as a dentist in rural Mississippi. His dental assistants used to invite us over for dinner, most of them lived in double wide trailers or prebuilt homes, and one time we went to one's place for thanksgiving and there was a fucking possum sitting in the middle of the table where the turkey should have been. I tried it, not terrible, but not great either.

The one's in the pic I'm trying first are LumberJack. After a few weekends, I'll be able to comment on.

So, from what I did a few quick reads...there are 4 or 5 decent brands to go by (all have full wood, no fillers). Things you can get quickly on Amazon.

BBQr’s Delight– Pine Bluff, AR
Bear Mountain BBQ Pellets
Cookin’ Pellets – Racine, WI
Lumberjack Pellets – Hayward, WI

Reading some more - there's some individual site you can get some decent stuff from. This guy's place keeps popping up in forums...I see some of his stuff is on Amazon as well. This will probably be my next go.

Not totally odd, but ostrich steaks are really good. If you can find them.

Damn, I love me some good BBQ. I used to be a saucier back in San Antone. I could collar up some of them greens, some crawfish out the paddy, yo'! Finish up with some crabapples for dessert. Hell yeah, ha!

In my experience the only non mainstream animals that taste any good are bison and kangaroo. Roo has to be so rare that I am not a fan unless stewed and bison is uber expensive.

Tried crocodile, camel, snake etc, all shite.
