The recipe the bakery uses is like a 98% match of what ours was and they make it daily. They do suck at rolling it into dough balls. They use a machine which allows larger air pockets to get into the dough balls before the dough starts to rise. Makes it difficult to sling some times, thin spots. (When i read his first post about slinging dough i wondered if he purposely chose that term instead of "hand tossing".)
Ain't nothing wrong with buying dough balls, we would get ours from an Italian food distributor in town. You've got the process right, gotta get it loosened up with some manual kneading, maybe a little mechanical help, then do the hand tossing. Keep your hands lightly powdered with flour: things can get a little sticky.

I missed the pizza discussion!

Last NY trip, we got off the plane and decided to try Lombardi's. After that, we immediately got on the subway disappointed with Lombardi's to head to...Grimaldi's!

While eating Grimaldi's outside, a woman walks by and says, "I'll flash you my "scarf" for a slice of pizza." Too bad she wasn't prime meat like our Peter Luger porterhouse that we had a couple hours later.

Nope... they sold out... when I can find your pizza in airports and shopping malls........

Also, what made Di Fara's is the old man who made dough by hand all day every day... That's the magic...

Lombardi's will always have a special place to me - I lived less than a couple blocks away...

I also liked Bleecker Street pizza as well.

Never tried Di Fara's. Will have to if I ever get out to New York again. (Which I probably won't for like 15 years)

@shoei where's a good place around LA/OC to get some good pizza? I just need a normal pizza with mozzarella and basil with a delicious crust. I don't need all these fancy topping.

Doesn't exist in LA... trust me, I've been trying for a decade plus...

Mulberry St pizza in a pinch (by the slices) but it's disappointing... Two spots in Bev Hills... it's only to be done out of sheer desperation...

Pizzeria Mozza is probably what you are looking for - I didn't love it but I can see why others do enjoy it... They do it right with wood fire oven but I wasn't thrilled with the long long wait and not quite NYC pizza...
