The BBQ Bacon Explosion was a resounding success. In all, nine people shared it and there was not a scrap left. As you can see from the picture, I cooked it straight on the rack with tinfoil underneath, folded at one corner so it could drain into a casserole dish. Cooked covered with tinfoil 2 hours a 300 degrees and I removed the tin foil for the last hour to crisp the bacon. Internal temperature was 190 F when I pulled it out. BRILLIANT. I will never prepare this again.

That looks amazing.... lol less the cheese for me though (lactose intolerlant).

As a former personal trainer, and still being healthy and fit, I'd eat it it. Sometimes you have to indulge... portion control is your friend.
