Pasta e fagioli!
Pasta and beans Not the classic soup but rather a ragu or Roman-style pasta dish. Really good! 1/4 lb pasta - small shapes, I used (dried) gnocchi 1 can white beans - cannellini, butter beans or any white bean 1 fennel bulb and stalks, chopped 1/3 cup grated pecorino romano Red pepper flakes Freshly ground black pepper EVOO Salt to taste Sautee fennel in EVOO until 2/3 done. Cook pasta until almost al dente. Drain beans, add to fennel. Add pasta to fennel and beans, reserving pasta water. Season liberally with red pepper flakes and ground black pepper. Add 1/4c pasta water and mix on medium heat. Continue cooking until pasta is done. Add more pasta water if needed. Turn off heat. Add most of the cheese and toss and mix well. Garnish with chopped fennel fronds, more cheese and pepper flakes. Grapes for dessert! Would pair well with braised pork shoulder or braised beef ribs if meat is simply seasoned with S&P. Fennel has a gentle and distinct flavor that would be overcome by a heavy sauce from the meat. Another variant is delete the cheese and add shrimp. Another topping is fried bread crumbs.
