Thanks for the advice on the spacers. I get that using a spacer is pretty much the same thing as using a wheel with a different offset but I've been told "no" on spacers so often I'm still starting to wrap my head around going that route.

Use Macht Schnell or Burger Tuning spacers. They're proven not to vibrate at high speed and they're hub centric.
