I've been using my 1 as a daily for the last almost 7 years, on the same rims and snow tires as you. Michelin X-Ice are fantastic overall, and surprisingly good on dry roads. They also last a really long time (with regular rotation front to back).
I had an M-Factory helical LSD for about 3 years, and the car was really really good and controllable in the snow. Even with the factory open diff, it's surprisingly good.
I still carry a small folding shovel in the trunk, as ground clearance isn't the greatest so you never know..
