Yeah, I’m not getting that. I’ve never had trouble getting water to boil on a gas cooktop. Ever. At all. Not even a little bit. I can understand the appeal of a smooth induction cooktop from a cleaning standpoint, but then you are limited as to the type of cookware you can use, and I prefer being able to actually see the flame to a digital display. My flush cooktop is a Wolf and I don’t think an induction cooktop is going to give me better control of the heat. Mine has an entire low heat simmer range of adjustment in addition to the normal range.
