You need to get a good gas stove, I mentioned Wolf earlier and also said don't buy a crappy gas stove because you won't get all the benefits gas can offer.

My neighbour switched from Gas to Induction last year during their kitchen remodel. The induction stove was like $5K, and then they spent another $2K on pots and pans.
