I love a properly prepared Balut! So delicious! I've had one served on the beach by street vendor and it was just okay, but properly warm at a restaurant and it's the best.
Did you try Dinuguan? It's a dish of Pig's Blood and its great over rice.
My personal favorite is Kare Kare, which is Ox tail and tripe with Peanut Butter sauce. Mix it with Bagoóng, a paste of fermented shrimp eggs.
Out side of Philippine dishes, I've had Sea Urchin gonads straight out of a live urchin, which is buttery and delicious.
Bird's Nest soup is also good, despite being made of bird spit.
Snails are delicious in French cuisine
Things I tried but didn't like:
Goat - meh
Shark's Fin soup, I didn't mind it, but I didn't love it, and it isn't worth finning a shark for.
